We are planning to visit our daughter in Amiens the week after Christmas. We are going to be in Paris the 31st thru the 2nd. What tours and sights are available at this time?

Most monuments, museums, shops and other attractions will be closed on January 1st (a thursday). With few people outside, it is going to be a great day for a walk through Paris and Paris sightseeing. Many restaurants are open too. December 31st and January 2nd are normal business days. Check in December opening days and hours.
